Ingredients:
- 1 pound lean ground beef
- 1 large onion, diced
- 8 oz cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1 1/4 cups cornmeal
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 2 eggs
- 1 can 14.75 ounce creamed corn
- 1 cup milk
- 1/4 cup bacon drippings or vegetable oil plus more for greasing the skillet
- 3 jalapeño peppers

- Preheat oven to 350°.
- Place a 12 inch cast iron skillet in the oven to get hot.
- Brown ground beef in a skillet and drain any excess grease.
- Combine ground beef with diced onion, cheese, garlic, chili powder, cumin and salt. Set aside.
- In a large bowl, add cornmeal, flour, soda and salt. Whisk to combine.
- Add eggs, creamed corn, milk, bacon grease and jalapeños, mixing to combine.
- Carefully remove skillet from oven and grease well with bacon drippings or oil.
- Pour half of cornbread mixture into bottom of the skillet.
- Top with ground beef and cheese mixture, spreading evenly.
- Top with remainder of cornbread mixture.
- Bake for 45-50 minutes or until well browned.
- Slice and serve.

- 2 box(es) cornbread mix
- 1 pound(s) ground beef
- 1 small can chopped greeen chilies
- 1 package(s) taco seasoning mix
- 1 can(s) regular corn
- 1 can(s) creamed corn

How to cook:
- Brown ground beef add taco seasoning per package directions; add green chilies; set aside.
- Mix cornbread per package directions; to corn bread add 1/2 can creamed corn and 1/2 regular corn add 1/2 of cornbread mixture in bottom of 9x13 pan.
- On top of cornbread put meat mixture, remaining can of corn and cream corn over that; add 1/2 of cheese.
- Top remaining cornbread mixture and cheese all over the top. Bake at 350F for 35-40 minutes.
- Let set 5 minutes. Cut into squares. Serve with sour cream, lettuce, guacamole , tomatoes or whatever you like.

- 2 cups shredded Mexican blend cheese
- 1 tomato (sliced)
- 15 ounce kidney beans ( rinsed and drained)
- 8 ounce creamed corn

- Preheat oven according to the cornbread package. Grease casserole dish (8x8 or other 2 quart casserole is fine).
- Brown meat with ½ package taco seasoning and drain off excess fat. Add onion and pepper and cook until tender. Add Rotel tomatoes, kidney beans, black olives, and corn. Let simmer.
- Meanwhile prepare cornbread according to package directions.
- Add green chiles and creamed corn.
- Spoon thin layer of cornbread on the bottom of the pan.
- Top with meat mixture then add half of the cheese.
- Spoon the rest of the cornbread mixture on top and bake according to cornbread package.
- In the last 5 minutes of cooking top with tomato slices and remaining cheese.
- Continue baking until cheese is melted.

I can't remember where I got this recipe but have had it for years. I always make this when I have cooked a big pot of pinto beans and ham. It's a nice change from your standard cornbread. My husband does not like cornbread or anything with cornmeal but always looks forward to me making this when we have beans. I have made it often and always get lots of compliments.
